You ask a great question, but unfortunately it is hard to answer! There are many different methods and approaches to calculating the carbohydrates for the diet. Some ketogenic diet centers forbid certain foods (like those with sugar) even in small, measured, and calculated amounts. Other centers allow them. Some centers focus on the glycemic index of foods and encourage patients to choose carbs low on the glycemic index. Some centers use calculations that are based on exchanges and not quite as precise/strict....others plug every food into a calculator and account for every gram.A lot depends on your dietitian, the keto center, and also the individual patient. Some patients tolerate certain foods that others can't, and often that knowledge comes through trial and error, unfortunately. The ultimate goal would be to get the most nutritional value within the allotted carbs - so that helps guide food choices. Of course there may be times when you stray from that plan a bit to give your child a special treat on occasion (perhaps a birthday treat).

As a certified nutritional counselor, I receive many questions regarding the Ketogenic Diet. It is true that there are different versions of the diet. However, the most common forms seen today are the “Classic Ketogenic Diet” and the MCT Oil Diet. Other versions of the diet have been used as well such as the Modified Atkins Diet and the High Carbohydrate Diet.
It is always my recommendation to consult ones physician prior to making any recommendations or changes to any diet. There are many variables to consider such as the type of the diet which one has been prescribed, the ratio and kilocalories needed to maintain an individual’s BMI, blood cholesterol as well as to support the RDA requirements for age and sex for sustainable growth and development.
